    What about the outside? Seems like having them already cooked to rare and then trying to get a sear would make it that much worse

    So we had a few backstraps left over (my BIL brought down some big filets so the beef made the deer go a little farther haha) and the leftovers may have been better than they were last night. Made a sauce (mayo, Dale's, pitface bbq spicy meatrub, and a splash of ghost pepper sauce) and it turned into 2 of the best burritos I've ever had (went back for seconds haha) also we had some "taco salad" which is just a salad with beans and taco meat (I was greatly disappointed the first time I went and had their families taco salad) left over my wife made I used as a base. Also had deer burger in it

    I set mine a few degrees under my desired temp. Then sear the outside in cast iron with butter. Just did some elk back straps tonight.

    If you can get a light/crisp trigger and start focusing on the trigger squeeze with him.
    That's what I had to do with my son when he was 4 or 5 YO, he's a more consistent shooter than anyone I know,
    he still has the occasional off day but then I go back to coach mode and he catches his mistake and adjust accordingly.

    I also had him shooting at nail heads very early at 20 yards.
    Make it a game where he can win a small prize.

    With a nice thick steak I cook with indirect heat charcoal till med rare. take it off and and drop the grate right on the fire.sear both sides and it flames up and bam.med rare edge to edge..called reverse sear..therma pin is worth its weight in gold
