Warming up Beef Street Tacos, rice and beans for breakfast.

Man, if I had some Menudo, I’d be warming up corn tortillas to dip in the soup after adding cut-up onion/celantro and slice of lime!

 

Morning fellas! Happy Easter. Celebrating with family up in PA since my dad turns 52 today and my wife works nights this whole weekend. Best to take the kids up here and give her a quiet house to sleep in.

We had some steaks from Ramsey's Farm on Friday, 2 porterhouse and 2 ribeyes... Phillies game yesterday and 2 lbs beef bacon this morning with breakfast. Putting off the work I have at our place in DE til after the holiday but I did load up the scrap metal here for the family shop to keep the old mam from working on his birthday.

I’ve done some yard work today; pulling weeds. Did some grass edging yesterday and now the yard pops with a clean outline.

Got meal prep to do, changing out the water filter for the fridge first.

I’ll make it a point to wash my truck too since the pollen is showing up bad against the Midnight Black paint.

 

I feel ya on the paint struggles! Black or White seems like it shows everything... Half of my old Camry was down to the primer so I still have to get used to washing a vehicle again.

I'm looking forward to some weeding myself we're a little late this year for planting but I've got some weed block to lay down before we get the garden going.

What's on the menu for meal prep?

Yeah, this is my first Black vehicle so I'm learning not to be too annoyed.

Yard work feels like it's never done...always something to beautify!

I'm preparing a Roast Chicken first which means I got lots of fat to remove off the whole bird...

Then rub some Olive Oil all over and then put my spices on it before covering up with Aluminum Foil and baking at 325F for 2.5-3 hours; I baste it every hour too then check internal temp when done.

The sides are Broccoli and mash potatoes...and of course, little pan of gravy.

We are grand-pup sitting since our eldest daughter + her hubby are going to concert in DC tonight...they are picking up our youngest daughter who is also going with.

Our daughters love going to concerts...they act like teenagers but are both in their 30s.

EDIT: I can't remember who they are seeing in concert.

 

Yeah fellow black vehicle owner here, it wasn’t my first choice but the truck had everything else I wanted so I got it. Don’t think I’ll ever get another black vehicle because of my OCD hahah

 

I feel you.

There are streaks of water deposits on all door handles from when the water slowly seeps from the edges and dries.

I feel like I should buy compressed air just to blow the water out/away from seeping edges as I'm drying my truck!!!

Once I get annoyed with the dirt/water deposits...I tend to wash my truck...more frequently! lol

Sounds great! Nice to be set for the week then too. I've gotta get back into meal prepping in order to stay out of my freezer meals since I'm culinary-challenged. Luckily we're getting back to grilling and smoking season with this weather so that'll help!

Concerts are fun but bigger venues just stress me out. Took my son and my sister to see Sturgill Simpson at the Met in philly last year and that was pretty cool tho.

That's another reason why I've been putting off the garden... Once those tools come out the work won't stop til everything dies next winter!

Okay, I'm sorta back...

Got the chicken in the oven...after removing as much of the fat at both opening ends! lol

I put a tad bit of water in the casserole dish the chicken is in and then cover it with aluminum foil.

Got a sticky on the microwave door with the start time: 5:47pm.

Now, time to cut up the broccoli and peel potatoes.

 

What’s the spice mix?

 

Adobo Seasoning, Garlic Powder, Grinded Pepper, and Himalayan Sea Salt.

 

Sounds like what I use… well unfortunately not the pepper. Wife does not like pepper…

Organic is the way to go. We re-did our whole pantry with that Yuka app a while ago. Got rid of all the stuff with dangerous additives.
