If it wasn't doing it before you replaced the U-joints and carrier bearing, one of those could be the culprit. Maybe a faulty aftermarket carrier bearing? Knocking on the floor sounds like a drive shaft issue to me.

Check to make sure the bolts for the carrier bearing are tight.

It was doing it before I changed bearing and joints. That's why I changed them, thought they were the issue

I was thinking it might be a bad needle bearing or CV. I just don't understand why it only happens when i inch forward or reverse. Not going fast

Are we working with an automatic or manual transmission here ? Its not listed in your profile .
Judging by your explanation , it sounds like anytime you put the transmission under load , you get some noise ( tapping )
I would suggest checking your engine mounts and tranny mount to start .
Regardless of weather you let out the clutch or put an automatic transmission in gear , you create torque .
If that torque is " not mounted or bolted down " as mentioned above , the driveline will have a tendency to twist and tap up against the bottom of your cab .
To verify this , slide under the truck with a large pry bar and pry on the transmission and exhaust system to see how much movement there is . Does the transmission or exhaust piping have enough movement to rub up against the bottom of the cab ?

I'll try this later today. Should there be any movement in the transmission? Just not so much as to hit the bottom of the cab? I'm just confused as to why it's only when I'm idling forward. It doesn't happen when I press on the gas. Just at a stop when I'm creeping 1 mph while in the brakes. Makes me think it may be the brakes. Calipers are tight

I've had the exhaust do that when put in gear because the motor mount was shot and the engine under load moves and so did the exhaust and thump. Everything has a small amount of movement but you shouldn't be able to throw it around. @ 79k you should still have warranty no?
