Heard a bang on my bedroom window. Went out and found a dead dove. I love when dinner brings itself to me.

here is what we took on the 1st not bat at all! totally my first time shooting a compound as well ha ha ha

what I have done before as far as cooking is soaking in buttermilk then doing the bacon wrap, you can keep in foil as well to keep some of the juices.

Why the soak in butter milk? I was under the impression that buttermilk draws out "funky" flavors. Usually used for shark, or stronger fish. Dove cooked right is great with no funky flavor. Maybe dredge in butter milk and flour. Then again, if it does something else for the meat, let me know. I'm all about making my food mo' better.

I can't say it took away the taste last time but it sure made everything juicy, now I want to deep fry them!

I breast and debone the breast. It's easier for my kids to eat. Marinade in Italian dressing with 1tbs onion and 1tbs garlic powder and 1 tbs Cajun spice. Wrap with beacon and throw in the smoker. They turned out killer. image.jpg

Damn I wish I had a smoker. That looks delish. Once I get some more hearts I'm either gonna skewer them and put them on the grill or fry them in a pan.

@Ag63i2 Did you get those birds with a bow??

So got more birds and some fresh roasted green chili (greatness about being in NM). I'm not good at combining ingredients but how would I go about doing something with green chili and dove?

Went Dove Hunting again today. They weren't flying around as much, only shot five (and one rabbit).

There was a big storm last week and it seemed to drive them all out of the area. Slowly coming back in but haven't had too much luck. Only a couple more weeks of season as well :(

Last night grilled and cooked some poppers, prep'd with split Dove brest, cream cheese, split jalapeno's, wrapped with seasoned honey beacon also grilled some fresh caught fish (made fish taco's) that was given to me by my brother in law. Also grilled both beef and chicken fajita's along with some cheviche-all washed down with ice-cold beer!
Perfect night for checking out the lunar eclipse and grilling!

Damn that looks good! On Friday had the same thing at a buddies - Jalapeno dove poppers. Also had Javalina burgers, Barbary sheep burgers, and an elk roast. Mighty fine wild game night I have to say.

How long do you cook your poppers usually and do you flip them at all?

It just all depends, really there is no set time limit (of course don't just leave them on there till they burn!..lol) just throw them on the grill and turn over every other few minutes till the beacon starts to smell cooked and sizzles!
Definitely not a long process at all, since its small meat-breast cooks real quick, makes for good appetizer's!
