I may have tweaked a few things...
    I had a 14" Magnaflow installed. They were afraid I wouldn't hear the 18"...

So to quiet it down they installed a 12" glasspack, with the scoops set to be more restrictive/most quiet. I like how much it quieted down, and it usually stays low because I try to shift by 2.5k.

I'm not concerned with power numbers, I'm just the kind of person that feels the more subtle changes in things. My feeling is that the glasspack makes the throttle feel more 'stuffy', less responsive, compared to how it was feeling after swapping out the stock exhaust.

Does that make sense or is this just in my head? I'm considering getting a longer, straight-through glasspack and an 18" muffler to have less sound but be more free flowing. Or will that just be a waste of money for no perceivable difference in throttle response?

Well realistically... The more open you make the exhaust on that 2.7 of yours the more low end torque you stand to lose which will lead to increases in the "stuffiness" feeling. It actually probably helped you, but the sound profile changed to where you think that there is something wrong. I run a muffler as well as an 12" glasspack and still feel like my exhaust is too open. I'm not WOT enough to warrant the miniscule power gains up top and would like my power band to be pushed a little further down. I might swap to an 18" here soon enough myself.

TL;DR - Its probably in your head

I hadn't thought of it that way, that's an interesting thought. If it hadn't felt how open it was before the glasspack I might be inclined to agree.

I spoke to the head guy at the shop this morning and he sounded surprised that adding a glasspack was suggested to quiet it down when the first muffler was too loud. He named another brand that is supposed to be the best combination of free flowing and lowest sound. I'm going in later today so we'll see what they suggest next.

I think you may have had it right after all. The shop replaced the Magnaflow with a Dynomax Super Turbo and left the glasspack in. The sound is now a quieter, lower tone, right about where I want it. And the truck feels much better now overall. Taking off from a stop feels much smoother and I don't have to give it extra gas to keep it from stalling. Would that have been caused by the initial lack of back pressure due to too much free flow?

I don't really want to get into the weeds on a discussion of backpressure vs exhaust scavenging, but the long and short of it is yes. Theoretically with the arrangement that you were running prior you would have been losing power down low (and conversely probably gaining a tiny bit up high) due to a decrease in backpressure. A few ponies lost in real life on a vehicle like ours makes a big difference, especially since we make the majority of our power in the upper RPM range.

No worries, I'll dive into that on my own time. Identifying the problem correctly will set me on the right path. Thanks for sharing your knowledge!
