    145F at 7am. The grill was set at 200F from midnight until then. Wrapped the point at 7am and clicked the temp up to 225F, and just now wrapped the flat with butcher paper. I’ll click it up to 250F soon. Need to have it done and rested by 2pm. Making burnt ends with the point meat.

    I usually wrap somewhere around 160 then pull between 180-185. That's at a steady 225 tho...... Seems you are about right. I would just do the 225 from now until about noon.

    Yeah the cooker is swinging from 210-250 and it runs pretty hot on the grates since the fire box is right in the middle three inches down. If I don’t see at least 175 by 10am I’ll crank it up. Gonna let er ride to about 210-211 internal. Should be nice and soft by then
