    True that most of the aging happens in the barrel. I’m pretty sure something happens to wine during it’s time in my cooler though.

    FWIW, I opened a bottle we’ve had for near 20 years that was slowly evaporating. Super smooth. Sort of like watered down tequila in fact. :rofl:

    So much so that I didn’t finish that first pour. I’ll probably try it once more but I’m betting it’ll get tossed.

    I'm not a wine connoisseur, I used to drink Boones Farm Strawberry Hill.

    I sit corrected. No idea what 90yo scotch tastes like. I'm not that old lol. Was it in glass for 90 years, or aged in wood before it was bottled?

    A friend gave me 2 of these several years ago:

    I filled them with Jose and set them sit in my closet for.. a long time, maybe a year? Don't remember.
    It became so smoooth, and tasted more like a fine sippin' bourbon than tequila. Barrels only last for about 3 batches, and the angels get their share.

    What do y’all know about this stuff? Got it from my mother in-law, she was cleaning out their liquor cabinet before they moved, and haven’t opened it yet. Looked online years ago and I guess it’s not made anymore and depending on where you look sells for $150-$300
