    Not sure if I shared this before, but a neighbor showed me a Buffalo Trace white dog to which he added a toasted (charred?) wood spiral in the same way Oak and Eden finishes their bottles. But in this case, it’ll be the only exposure to wood. He’ll “age” it for a few years and then try it. Super interested to hear how it turns out.

    On a related note, I discovered recently that Cleveland Whiskey, which is of interest being in my hometown, ages the white dog quickly by using pressurized stainless vats filled with white dog and cubed wood. I’m going to revisit the bottle of theirs I have now that I’ve read up on the process. However, the distillery sells barrel tops, so I must be missing something.

    Figured some of it out. They age whiskey for six months in the traditional manner and then run it through pressure cycles with cut up new wood and wood from the original barrel’s staves. The new wood is wood that doesn’t make good barrels but might impart new flavors.

    Gonna revisit the open bottle tomorrow. Eventually I want to try their Wheat Penny product as the wheated lover I am.

    My girlfriend got me a make your own whiskey kit and this is basically what it is. They suggest starting with a white whiskey and then adding the various flavor profiles and letting it age. They only suggest doing it for like a month or two but I don't think that's long enough to really get the flavors in there.

    I guess there’s a lot of this stuff out there, including an oak bottle, charred inside, that you can age white dog inside of.

    But yeah, a month or two? When a BIB is at least 4 years? Seems to cheapen the process. But then again sometimes I’m old fashioned.

    I hear Alberta Cask Strength is a little bit easier to acquire in Banff than most places.

    So, hit up the technology whiskey today. It’s good! Much better than original pour.

    Bit of tart fruit on the front, peppery on the back. It’s like a combo of WT bourbon and a spicy rye.

    I like that they are owning it.

    In terms of the chemistry, I accept their argument. Their thing makes whiskey a different way, and people might like it.

    In terms of being a curmudgeon enthusiast, ancient traditional methods ride or die.

    Yeah if you fly into Calgary and drive you can buy it after security in the airport. Comes out to about $60-65 US after the exchange rate. (Might be different for international flights, last I saw it I was flying within Canada)

    I think my joke was so inside that I was the only one laughing.

    Alberta Cask Strength is in every single store here locally. I have no idea why. I know a couple guys here really like it…had to Google Banff…and then oh hey Alberta don’tcha know eh?

    No idea. It's way in the backlog. I have heard only excellent things and had never encountered the cask strength, so I grabbed one while there was one to grab.

    Two new additions. I tried some of the fiddler neat, a little bit of a punch, then strong notes of caramel, a very strong finish kind of like wild turkey, but a little more refined. I prefer something more mellow, so I added a little water and ice and it smoothed out some.

    I would say fiddler is like your shitty wife finally left you, and you decided to fire down a few shots and knock on the door of the girl who is on probation for torching her ex’s car after she got a full sleeve tattoo.
