    I don't have access to real shine so I used Everclear 190 proof. It's basically unfiltered apple juice, cinnamon sticks, honey, and then the Everclear. There are a lot of recipes online but they all look weird and gross to me. This is my first time trying my uncles recipe. I've been reading that the sugar helps the apple juice ferment? supposed to taste better over time anyways.

    The taste reminds you of apple pie but you can't really taste the liquor and gotta be careful with it.

    since the recipes online are weird and they say to also add flavored vodka and even rum I'll just tell you how I was told to do it. I doubled the recipe below.

    One gallon of unfiltered apple juice. Put like 4 cinnamon sticks in it and keep that in the fridge for a week and shake it every day.
    After a week pour it into a big pot and heat it up but not to a boil.
    Add a cup of honey and stir until dissolved. You can also add a cup of brown sugar but I didn't.
    I decided to add more cinnamon sticks and kept stirring and kept the heat up for maybe an hour.
    Stir in a half bottle of Everclear 190.
    Use a strainer and fill up canning jars or whatever you want to store it in.
    Put back in fridge for 2-4 weeks.
    There will be bits that settle on bottom so shake well and enjoy.

    I heard it will keep for 6 months but maybe up to 2 years if you put it in the freezer.
