I installed a set of Cali Raised fog lights two weeks back. The install was straight forward and I have them wired to a Cali Raised switch independent to the headlights.

My first impression with these lights, is they seem to be pointed much too forward. I'm used to illuminating the ditches more with my fogs in my old 2011 Tacoma. The Cali Raised currently seems to not have the same spread as I'm accustomed too.

My thought is if I remove the nut holding the light to the truck and re-install each unit with a spacer between the Cali Raised housing and the truck, this should alter the angle of the entire unit to point more towards the ditch. Any advice is appreciated.

The problem is CaliRaised does not sell fogs (yet). You bought spots. Spots are an off road distance pattern that should not be run on the street as it is blinding to other drivers at distance. Spots also only illuminate a very small area. See this thread, specifically the beginning comparison of CaliRaised spots to a fog pattern.

You need fogs. CaliRaised is supposedly releasing some soon, but there are also lots of great options in that linked thread to choose from.

Looks like I have some spots to mount on the rear of my truck after I purchase some proper fogs. I already have the ditch lights. Thank you for the information.
