A lot of people requested this day for some reason. But I'll have first dibs for November.

This is torched, top to bottom - fresh, torched, scrapped, open and cleaned. Normally I only slice 1/2 way thru and clean out but these were a special for the neighbor, on the half shell. Fill with philly, cheeses, hot sauce, wrap and bake. On the half shell you can top with fresh cilantro a few minutes before removing from the grill. I have simmered the bacon in a hot sauce, then wrapped the peppers, and baked, you must throw out that sauce because of trichinae. I'll post my dipping sauce later, before anyone can make it in time for Saturday.....
Oh, the good thing about torching is the peppers are 90% cooked so it doesn't take forever to finish up.

I can do 2 pounds of peppers in 30 minutes, takes longer to cook 'em then prep.

Stop by Saturday and you can learn the tricks, although I will have torched all the peppers, I'll save a few for a demo.
