First attempt at making sourdough bread

    Friend turned me on to making sourdough bread. He gave me some of his starter that he's had going for 20+ yrs. Made with all organic unbleached white flour, whole wheat flour and rolled oats. This was my first loaf, not pretty but oh so tasty. Easy to make but whole process takes about 12-14 hrs, mostly waiting for dough to rise.

    Very nice. Bunch of years ago I was in cali doing work for a client. Guy I was working with and I headed over to San Fran to have dinner. The restaurant we ate at was known for their great seafood and their sourdough bread. The story is at that point the starter they used was supposedly well over 100 years old (I think someone said like 140+). Now I don't know if it was true or not but I can say they had some darn good sourdough bread, stuff was no joke.

    Several years ago I was just as in to sourdough as you were. I had all of my steps written out and the timing of things. It took about 6 months to get to where I made a loaf that was honestly good. I made the starter myself from scratch and that was really the most important thing to it all

    Yah sadly life came crashing down on us and provided me with the better part of 10 months of leave from work and allowed a real love for baking bread and now... homemade Neapolitan Pizza. (Thanks Ooni).

    I will say it took a good solid 4-6 months as well. It was getting the proofing time and temp down for me. You still at it @HalfpipeKermit ?

    I havent made bread since about 2016 or 2017. I do miss it, but my 36 other hobbies that I neglect for my current 2 or 3 get in the way off it all lol

    I took up sourdough bread baking during the first lock-down of the pandemic (like a lot of other people). Haven't bought any bread since then. Been baking all sorts of breads but sourdough is my favorite although it is a long process. I usually do 80% bread flour, 8% rye flour, 12% whole wheat. Love the smell of fresh baked bread.

    If that is the restaurant I am thinking of their starter survived multiple earthquakes and one of the great fires.

    Got my starter last week. Haven’t made any bread yet but made sourdough pancakes yesterday. They were delicious.
