    Professional (used to be called Competition) burns hotter, leaves less ash. More like lump but in briquette form.

    Little brown sugar

    Trimmed it to fit right and reduce the fat. Gonna sit over night rubbed down then hit the smoke for a couple hours in the morning

    Both Lowe’s and depot are having the sale. I picked up 5 double packs.
    I reserve all the juices, I pan and wrap mine so there is plenty. Pull the juice out before rest and put it in the freezer, and separate fat out. Put a few cups of your favorite sauce, more rub, and the juices in a pan and bring to a simmer. If you want it thinner, and any other liquid you want (beer, vinegar, apple juice, pear juice, etc.)

    I mix some meat with that, and put the rest in the side.

    I have air bags and the Baja suspension. But at 3:00 they only had 6 bundles left on the floor :(

    First run. In the 90's next 3 days guess it is safe to finally take the snow brush out of the truck.

    Picked up another hanger steak today! This one came from a local butcher shop. They already had it wrapped up for me, so I didn't get to see the cut, but it came in a little over 2 lbs, I think.

    While I was there, I was talked in to some flat iron steak which had just recently been butchered off of a carcass. Then, while I was looking through the glass to the room where the action took place, a guy was preparing tomahawk steaks. I was watching intently as he removed the rib meat (would otherwise be plate short ribs) then asked what the plan was for that meat. They said they use everything, but weren't sure if that was going to get ground or what. They rang it up as "miscellaneous beef" and gave it to me for $4/lb. Boneless short rib for $4/lb? Hell yes! Gonna be a beefy weekend!
