    Mine are 2 pieces that lock together to make 12x12. They lay on top of the existing grates. Move or remove as needed.

    Just sprayed it down with some oil. In cooldown mode. Then I'll heat it to 225 and find something in the fridge :D

    I dont know if I'd do steaks like that, since some of the muscle groups are different texture..ie tougher than others. So one part is going to be chewy while another part is tender.

    Yeah that is how I use the ones for the Jumbo Joe. And have used them on the 22" kettle and gasser also sitting on existing grates. Not anymore at least for the Genesis! Took just a bit more than half the time as normal and had the 3 burners (sear station off) on the lowest setting. I didn't consider that I would be using less fuel but that is OK :D

    Going to take a few times to get it down totally. But results are great so far. Of course it is the only one so far too LOL.

    These turned out great, but they were brined for 24 hours so that may have helped. I prefer to bone the shoulders and hams out so you can make steaks or roasts.

    I’m guessing that grate is cast iron? Could I take a wire brush on a drill and clean it good, then wash, then reseason it?

    I use a 3M rust and paint stripping wheel on a drill with my new or new to me rusted cast iron then reseason it. Works like a champ.

    That wheel will not get down between the bars on the grate but will take care of both top and bottom surfaces pretty quickly. You can also throw it in a fire with hot coals but you have to be careful not to warp it.
