    Not sure how I became the wing king, have you seen the wings done on here especially lately?!

    What Josh said. I want my wings crispy on all sides, every time. You don't even have to use the baskets I've grilled them before and flipped them. However with the Vortex I don't have to move or flip them in fact seems like the less you touch them the better. Not sure even have to rotate the lid like I do every 15 minutes but it makes me feel like I am doing something LOL. The Vortex helps cook them on both sides and most important to me it is reproducible every time.

    Both sides fit extremely well and tight I wish the OEM mating surfaces did as well. And it is Stainless Steel. Gives you the same or very close cooking surface as a 22" WSM. With 3 cooking grates you have to think about what is dripping on what however. If all meats are the same not a problem. I put fast cooking things on top which are usually wrapped in bacon of course.

    Main idea for me was to use it as a hanger like a PBC or UDS and have used it like that. The gateway drums hanging rack fits it perfectly. And the PBC hooks and hangers will then too of course.

    Just got it last fall before winter so haven't used it a lot. But so far has worked well for me. You can add the roti ring to it and get yet another stack

    I know you aren't asking my opinion but I'll give it to you anyways because this is the internet. While obviously you can get the wings done without the vortex, I'm willing to bet that you'll get a much more uniform heat with it. I have noticed some hot spots using the vortex-less method that I think I could eliminate by using a vortex. One of these days I'll buy one.

    Taste was really good. Two I did unwrapped and one in foil after half way point just to see. Thought it would be too light of smoke but it was really good. Foil ones turned out too tender but the unwrapped ones were spot on. Chalking it up as a success and looking forward to the next cook.
