    I let mine age at least three weeks. it really mellows out the longer you rest it.

    Loin & Flavor = Canadian bacon. Scoring the surface and drenching it in Grade B Maple Syrup before you smoke it helps.

    Be nice to try, but I think I'd have a hard time convincing the purse-holder that $150 for a brisket is anything close to a good idea.

    I had a thought the other day when I was cooking some chicken breast. I know this probably wouldn't be ideal but was wondering if I would get some benefit from doing this. I have a Char-griller with the side smoker box. If I'm using the side smoker box, could I raise the grate that holds the charcoal in the main cooking area to the highest position in hopes that the smoke from the firebox wouldn't just go straight to the top and out the smoke stack? I guess it would be used kind of like a tuning plate?

    lemme see if I can dig up a pic. flip the charcoal try over and then up on top setting. That's how I used mine for the longest time. I'll see if I can find it.

    self explanatory, but pic anyway. I also wedged a wood piece on the left side to force the gap on the right side closed more. and I kept my water pan at that point, like in pic. Had much success with that "mod" along with dryer vent mod and making a charcoal basket.

    Thanks for the pic! I've been wanting to make a charcoal basket but I can't find any expanded metal like that. Our local Lowes doesn't carry it in stock and we don't have a Home Depot close by so I'm still trying to figure that out. So you have the piece of wood under the water pan?
