    Damn my cap steak is only up to 114°, I'm starving. And considered sticking a fork in my screen to nab a chop. Been a long time since I've done pork chops need to add those to the list, looks great!

    So here is the deal... You are correct even in the bulk vacuum pack they come with the fat cap removed. And mine doesn't even sell it in the vacuum pack.

    You have to watch the labels carefully. They sell top sirloin right next to the picanha (sirloin cap steak). I picked up the last package today and all they had was choice. I have purchased Prime before and talked to the butcher and just like yours he said it is hit or miss. They get it in when they get it in.

    Because they cut the fat cap off on the Sirloin cap steak for some Brazilian things might have to improvise. But IME bacon can make up for a host of sins...

    I've had a kilogram of "Thick Barbecue Salt - Sal Grosso para Churrasco" since Nov. 8 waiting to find Picanha and think going to call this good enough for now.

    Been cooking it for my son for almost a year now when they have it in stock but never had any myself. No wonder he likes it so much LOL. I grill his when I do a capsteak he doesn't like the capsteak and likes his cooked to shoe leather anyhow.

    He also likes it buried in Montreal Steak Seasoning so no idea how beefy the meat taste, did 2 pieces tonight for him when I did my capsteak

    See how it goes tomorrow around here but right now planning on using the Lebre salt with the rest of them. And of course bacon. And fire.

    Most butcher shops and even grocery stores around here sell them. Although apparently the Viking influence is strong in these parts, It is usually called a Viking Club at the grocery stores. Apparently giving the impression you could club someone to death that tried to take it from you.

    In the Twin Cities Manny's Steakhouse is ranked one of the top 10 Steakhouses in the world. And they call theirs a Bludgeon of Beef for only $111.95. Already cooked of course. With no sides. Not that you would need any...
