    This was a stubborn one. Over 14 hours and the largest pre-trim weight brisket I have smoked 17.4#. I was getting way different readings in different parts while temp probing.

    Speaking of technology, last week has been hell. A couple of Billion dollars later as of O'Dark thirty this morning all the sites of the #1 ranked Medical Hospital in the US are on the same Electronic Medical Record System. Not only a lot of money over a couple years but a ton of work by a couple thousand people. I have more than my share of it. And more to come especially on Monday.

    Work into it has been brutal. Last week caught myself thinking about grabbing a raw hot dog out of the fridge and eating it over the sink. Screw that, even being a bachelor haven't sunk that low. So I nuked that sucker first and wrapped it in smoked cheddar cheese. And dipped it into ketchup, about the only meal I recall eating in the last week :anonymous:

    Youngest son took some salmon and shrimp out of the freezer on Thursday and it has been sitting in the fridge since then. He left last night for his girlfriends for the weekend. Not going to throw it away come Monday and should have been sleeping finally, but a celebratory meal was in order. So I did. Sleep will come in a few minutes finally. At least for a couple of hours.

    Soaked a cedar plank for a couple of hours while I was working.

    The grill? I love it for $75! Had to sand blast the grate but other than that it’s a great grill/smoker!
