    Had a little freezer incident yesterday in the garage fridge. Door somehow came slighlty open. Stuff by the door was partially thawed, so i’m doing a ham, and pork tenderloins today and tomorrow. Making tacos for the boy and a friend later with the ground beef.

    @Bigdaddy4760 i think your next one you should be able to just a whole tree in it and cook with that. None of this splitting the wood crap. :)

    Had to wrap briskets ...

    Almost 12 hours and they are 156-162*... Foil and back on. Onward.

    But damn... They lookin good.

    It's got some Mods
    I’ve never done a brisket before simply because I’m too cheap to buy a $50-60 piece of meat. Today that finally changed. I covered it in pitfaced rub and let her go for 11.5 hours until it hit 200. After that I wrapped it in foil and placed it in a cooler for two hours.

    Here it is right before I pulled it.



    I always like to throw a few pieces of thick cut bacon on whenever I’m using the WSM.



    The flat was a bit dry but the point was spot on. All together I'd say for my first brisket it wasn't bad.

    ^ brisket looks great!

    I hate paying what we pay here in the NW for brisket too! My folks are in south Texas and the HEBs there have brisket all the time < $2/pound!
