    Probes: i had a little trouble inserting mine as well, but figured it out. There is a seal/gasket in the transmitter, that takes a little force to get them seated the whole way. Once in, they are good. I’m guessing it’s part of the “waterproofing.” There are flat parts on the probe plug that have to be aligned properly to get full insertion.

    Quite good, actually. Prime brisket has been $3.29 per pound for over a year, though last weekend they had Choice brisket at $3.39 per pound. Perplexing...

    Great seafood selection, too, sourced primarily from Alaskan suppliers. It’s the only place I can reliably find fresh, never frozen black cod.

    Well, no brisket ornribs for me tomorrow. I took them out of the freezer three days ago, and out them in the fridge to thaw, the garage fridge. Its been so cold, they are still comlletely frozen.

    Alternate plan, reverse seared prime rib.

    I know, but we were out most of the day, its not thawed, trimmed or rubbed. I’ll save it for next weekend.

    I may throw thw ribs in a bath tomorrow morning.

    We won’t be doing anything for SB tomorrow probably won’t be home till 4pm or so from soccer tourney. Thought about making some chili but we have to leave about 6:30am for the first game. I ain’t getting up to make chili that early lol.

    Butt rubbed down. Starting the smoker at 0400 tomorrow. Got a hunk of tri tip in the fridge too that I’ll prep up tomorrow. Mac n cheese will be thrown togetherness tomorrow too

    Meal turned out great!

    In addition to the brisket, I did some poppers and some armadillo eggs. The jalapenos were stuffed with cream cheese and goat cheese. The beef was seasoned with the "unicorn" rub, then wrapped in little bacon weaves. Poppers had a dusting of Meat Massage on them. All of that dripped on to the beans below. The brisket was probably a tad on the dry side of ideal, but it was tender and flavorful. I wouldn't turn it down, but I've done better. The appetizers were the showstoppers of the evening.

    Well shit... Spoke too soon. Ignitor won't ignite. After I replaced the board before I turned it on and the fan started but I guess I never verified the ignitor. :bananadead::oops:

    No charcoal on hand either for the kettle. Sum bitch.

    Tried troubleshooting a bit but dark and raining out. Will toy with in the am.

    @Bigdaddy4760 ... Where are we with my new smoker? :boink::rofl:
