    Alright, so now the Turkey is done-diggity.

    He got stuck in a Reynolds Oven Bag, which by the way are really useful and if you don't use them already you should. Whenever I want to wrap something like for a "Texas Crutch" I just stick whatever it is in an oven bag. They handle the smoker temps just fine and they never leak like foil does sometimes. I buy a bunch of them when they are on sale, usually after the new years as the grocery store gets rid of the ones they stocked up on for TG, Xmas, and new years.

    Anyway, he went into the bag, which was wrapped in the big beach towel and then shoved into the Coleman hard cooler.

    Now I've put on a few taters to smoke and dinner time should be around 5-5:30ish. The turkey can carry that long in the cooler and still be plenty hot.

    Breast temp finished at around 167, thigh at around 170. I had tented the breast with foil toward the end trying to let the dark meat coast a little higher but oh well. I always forget that when I use the Turkey steamer thing it cooks faster overall and the breast temp tends to run closer to the thigh temp than if I don't use the steamer thingy. I prefer the dark meat to get up to around 180 or so, I just think the texture is a little better that way with the dark meat (I prefer the dark meat but nobody else in the fam does). If I'm doing a chicken I sometimes lay an ice pack over the breast while I'm getting the smoker ready to make sure that happens.

    In the pics you can see the drumstick meat has pulled away from the bone. He'll be pretty tender I reckon.

    I'll put up a couple more pics when it's sliced up later.

    So we got out of soccer later than I expected. Had to drive an hour back towards home then to the grocery store. Bought the stuff for armadillo eggs and bacon wrapped stuffed chicken but as we were walking through the store I started not feeling the cooking. SO I decided I’m taking the pork chops left over from the other day I’m going to cut them up into pieces and then toss them in some bbq sauce and rub and toss them on the smoker to come up to temp again. They will go on nachos. So I’m doing Bbq pork nachos.
