    Cut two in half for the top rack and one rib rack on the bottom rack.

    Only tried it once and they didn’t cook very evenly. Knowing what I know now I’d probably rotate them. Or roll all three and leave them on top.

    Here was two racks of ribs.

    Well I decided I’m gonna do a crispy skin on smoked belly. So it will be 24 hours before this sees the light of day again.     Skin on a bed of salt, meat seasoned with a savory rub.... no sweetness for this run.

    make this too next time!: (not sure if it'd pair well on the pulled pork taco with slaw, but it's good!)

    Avocado Crema:
    • 2 avocados
    • 1/2 cup cilantro (depending if you like the flavor)
    • 1 Cup Sour Cream
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 2 lime's juice and zest
    • milk to desired texture (usually about 1/4 to 1-3 cup gives a good creamy texture that pours well)
    • blend with immersion blender or blender or whisk

    Nice! I actually make a variation of this about every third taco Tuesday. I've never included lime before so I'll try that next time!

    I make tacos every single week. Usually on Tuesday. I usually eat tacos 3-5 times a week easily. It’s a sickness that I love! Can’t wait for tacos tonight.
