    I like both. If they were both the same price, I'd still get spares. Rib tips are delicious. Hell I'd buy just rib tips if they sold those.

    So 11 days ago I start the process to make buck board bacon - put Prague salt cure, pepper & a little maple syrup on a butt, bagged it and tossed it in the refer. Turned it every 24hrs. Today I pulled it out, washed it off and soaked it for 2 hours in water to get the cure off/out. Dried it off and into the fridge for 24hrs to form the pellicle.

    This is my first time with BBB and wanted to ask those who've done it if this is what it typically looks like at this stage? Pic is just before I put it in the fridge...

    I was going to use my big pellet smoker to cold smoke the butt tomorrow but decided to try something with a smaller volume. I also wanted to use my mailbox mod to keep heat away. I'll pack a bunch of containers of ice in the weber around the butt to keep temps down. I just did a test run and it works surprisingly well!

    Epic Fail! Everyone knows that when you use lighter fluid everything tastes like lighter fluid. Who wants a hand that tastes like lighter fluid? Yuck.

    Well, yeah. 2 hours smoke time, 30 minutes wrapped, and another 15 sauced or still wrapped for the no sauce ribs!


    Tenderness was on point! For some reason, the very same rub I've used before seemed salty this time around.

    Yes, baby backs! Temp? Who knows! Never temped it. I'd have to set my thermometer in there to get an actual reading.....I believe the info on Po'Man says tops 325.


    I believe the metal plate above the coals helps get it to temp and maintain....

    I put the butt on this morning. The makeshift cold smoker is doing as good as I hoped. The smoke was getting overwhelming in the house so I set up a fan to blow it to the neighbors. :D

    The ice packs are keeping the temp down nicely as well...
