    Just got back from Fareway with 2 pork shoulders at 99 cents a pound.

    Days like this .. I need a shopping buddy haha.. their limit is 2 at a time.

    low and slow...maybe add a water pan below the brisket to keep the humidity up in there? Im still working on that part myself. Ive also wanted to try injecting with a beef broth or au jus.

    Went to a new ish BBQ joint. I went a few months ago and wanted to try again.

    4 meat plate- 1 pound of meat total ($23) - Brisket, Ribs, Turkey, Jalapeno Sausage, Green Chili Mac and Cheese, Cream Corn in the container.

    Turkey- Moist and good smoke flavor
    Ribs - Slight tacky glaze on them sweet with a tiny bit of heat, really FOTB texture, little more than I prefer but really good
    Sausage - nice kick, but average sausage. Not bad, just didn't stand out.
    Brisket - Great Barq and good smoke flavor. Really moist. was definitely overcooked a bit though, it fell to pieces if picked up. still enjoyed it
    Mac - really good with the green chili!
    Corn... I mean... c'mon... it was good. :D

    I've only done 1 real brisket so far. I didn't wrap and had a lot of bark (too much for me). The point was really moist, the flat was dry. Others have said I may have undercooked, and I may agree with that as the probe just didn't go in as smooth as I'm told it should have. I will be wrapping next time after a few hours. Just gotta experiment!
