    Low and slow. You want it to probe like butter. I use a Traeger I run mine around 225 most of the time. I don’t wrap either. Haven’t had a dry one. Should get some good bark on it.

    do it! don't think!

    Foil or butcher paper? you can still get good barq wrapping, just make sure the barq is really set before wrapping. should be able to lightly scratch with a fingernail and it not scrape off. don't add moisture to the wrap or that will expedite steaming off the barq. I prefer to run full nekkid on my smokes... :eek::D

    little tougher to nail the final product, but not too bad once you get a couple under your belt.

    It can be dangerous as well, line snaps, it pops off the post, etc.
    Those are probably the best.

    I now subscribe to the hot and fast method. 100% naked, 250 for a few hours, then 275 or so until probe tender in several spots in the flat.

    That's more "warm and quick"... Hot and fast I always associate with over 300*. The over 300 thing is a waste, well, it wasted a brisket for me :rofl:

    275 will get her done a lot faster than 225. Never did one at 300 or more
