    Saw a video on Facebook where a guy smoked brisket with thick cut bacon draped over the fat cap. Switch out for fresh bacon halfway through. The implication was that it makes it juicier. I am thinking if the fat cap does not render down making it moist and juicy, the bacon will do little to help. I mean, I love bacon so I will try it. If nothing else it gives me something to snack on during the cook.

    Got 12 lbs of shoulder on. Running fast and semi hot. Looking to maintain 275. There are some storms predicted, so i may end up wrapping and putting it in the oven at some point.

    Leftover flat. It had been soaking in a vacuum bag for the last 1.5 days with a cup of beef broth. Threw it in the some almost boiling water to reheat. It’s much better now than it was on cook day. However, the food saver bags do NOT work in boiling water. The shit straight melted at the end and opened up. Luckily I was done cooking.

    Why boiling water? Maybe try water temp at 140-160 degrees.

    Foodsaver bags work for me, but I normally just simmer.

    Ya maybe next time. I wanted faster heating cuz I had to get to a meeting.
    Food save brand you can’t boil with. It says simmer or warm water. Lesson learned.
    There’s other brands that you can, idk of food saver brand does or not but the ones I have do not work for that

    Was wondering if your Fareway stores down there were small like the ones here, guess you answered that ;) I do like their meats, especially pork. Best ribs I ever made came from Fareway.

    My Weston bags say Sous Vide on the box.
