    Mmmm I need to do another butt or brisket soon. Gonna do tri tip for dinner tonight though on the smoker. Wish my grill grates were here for it. Maybe I’ll do some ribs tonight too or tomorrow. How long do ribs usually take?

    3-2-1 is self explanatory. The last ribs I did were unwrapped straight through and they took almost 5 hours to get the right bend. A co worker did 3 hour ribs at ~300degf and they came out as well as low and slow in my opinion.

    Not being a smart ass here.. but like all meats, I feel like temp is far more important than time. Ribs can take from 3-6 hours depending on the smoker, the smoker temp, the ambient temp, the quality of the ribs and how many times you open it up to look. Wrapping them will also affect the time.

    I smoked a brisket awhile back that was done in 7.5 hours and I have had them take 14-15 hours too. Same with pork shoulders.. probably the quickest was 6 hours and have had them take 10-11 hours before.

    A suggestion for you would be to start a BBQ diary and record all the things I mentioned above and see where you average out for each thing. You're not going to get instant results.. but it will be a lifetime reference for you to pass on to the next generation too.

    I get the cook to IT thing. I was just looking for a good estimate to see if I have time to actually go and get ribs and put them in today or if I should just wait and do ribs tomorrow. I haven’t done ribs yet so I don’t know their usual average time

    Any method you go you’re in the 4-6 hour range so you should be good with your time there.

    ribs also a texture thing. sometimes the wrapping for 2 hours is too much for my liking. I only wrapped for 1hr and it was far better than 2 hour wrap.

    For 3-2-1. Should I be smoking low for the first 3 at like 150 ish? And then bump to 225 for the last 3 hours? Or just do a constant 225

    I've found the 3-1.5-1 method has worked best for me.

    I stay at 225*. 3-2-1 for spare ribs, 2-2-1 for baby back ribs.
