Made wings yesterday, they came out awesome! Tons of flavor and spicy but not so much that most people didn't enjoy them.

Coated them in cayenne pepper, cumin, paprika pepper and just a little salt.

Smoked to 165° then added the leftover seasoning i had.

Sauce is yogurt, lemon juice and garlic.

Well, I went to long in the foil and they were really fall off the bone tender. So I made a Mcrib with some homemade and grown habanero pickles, sweet vidalia onions and sharp white cheddar.

This is my first time smoking spam, not a big fan of potted meat. I will say it was salty but I was told I put to much seasoning as spam is salty already. It was good and will do it again as a snack when waiting for long cooks.

Try the "lite" version, less salt and less fat. I'm now even doing the WallyWorld brand (Great Value) lite and liking it even better.

I'm going to have to give this a try. The crushed pineapple with some hot paprika and maybe a touch of corriander, cumin, and brown sugar sounds fantastic.

There's definitely too much salt in it already (790mg per serving and who the hell has just one "serving") so salt free rubs are the best. I followed this recipe years ago when I first tried it http://olddavespo-farm.blogspot.com/2010/03/spamwich-and-rooster-booster-wings.html?m=0
And left out the salt.. it was pretty awesome then and it still is today!

Also.. for those who are interested this guy's blog goes back to like 2008 and he makes the rest of us look silly. He's got more ways to cook and more ideas than I've ever seen one person have! It's a great read, well organized, great recipes (love the wings recipe on this same page too!.. just don't do indirect heat on these ones like he did)

Wife picked up $70 worth of king crab so ok, on! That's a full size roasting pan.
