    I had the bright idea to open my mouth and say something to the effect of “I kinda wanna try smoking a turkey for thanksgiving this year”.... well now my family is kind of expecting it... any tips or pointers or websites that I can trust?? Will be using a green mountain pellet grill..... Haven’t looked anything up but will start no just decided to come here first.

    I’m not a huge turkey fan, however work gave everyone one last year for Thanksgiving and I spatchcocked and pumped it full of Tony Casheres Cajun Butter. Quite possibly the very best turkey I’ve ever had.

    Get a turkey now and do a test run. KISS just mix butter and seasoned salt and rub the hell out of it, inside and out. Cook at 225f til IT of 160f. Foil tent for 30 minutes. If it sux, try something else. ;) It won't suck, I gar un tee.

    I've tried that same injection and it was :thumbsup: But, some people don't like the Cajun seasoning. Hell, some people don't like smoked turkey.o_O

    If this is your first time, wet brine the turkey 18-24hr or depending on size, when your done brining Rinse off brine well, pat it dry with some paper towels. This is optional but to me it’s a must. Put the turkey on a cooling rack in a pan and throw back in the fridge for an additional 24hrs-48hr to let it dry even more. Don’t be scarred if the turkey skin will look kind of off, but the skin will be crispy!

    You can use any rub you like, try to avoid salty rubs just because it’s been brined

    Keep the temp above 300 if you want crispy bite though skin and not rubbery skin. Keeping it whole takes it longer to finish vs spatchcocking.

    invest in a good thermometer to watch the internal temp of your turkey!
