    Doing a brisket for family tonight on the Weber kettle. Light coat of yellow mustard and Keg seasoning. Mesquite and Hickory. 4.4kg/10.3lb. Went on at 5;30 this am
    I think I'm gonna be fighting with the weather all day. Expected high is -5

    Both @Aloha Scout and @JeffRoyJenkins on here are running PBC's and have posts in this thread. They work well.

    Dedicated smoking sites often have debates about which is better a Pit Barrel Cooker or a Ugly Drum Smoker. Do a search for PBC vs UDS. They both work well and have pros and cons. But bottom line is don't think you can go wrong with a PBC.

    I put a Cajun Bandit stacker on my WSM and purchased a hanging rack for a UDS then skewers from PBC. Kind of a hybrid of a bullet smoker, PBC and UDS. With an ATC to control temperature.

    For when I feel like the flavor profile of meat cooked directly over coals with juices dripping on them smoking to flavor the meat.

    :thumbsup: After 9 straight days of not getting above freezing finally going to get up to -5° C for a high here too!

    A friend of mine smokes all winter long with a 26" Kettle even down to -30° C. He says that the 26" works better than a 22" when it is colder because he can add more fuel. But it takes more fuel with a larger kettle also, it is almost 150% in surface area larger.

    I use my kettle to smoke often in the summer but really haven't done it once it gets below freezing I end up using the WSM then. I expect you are correct and will be adding a lot of fuel through the day. Good luck and am sure it will turn out fantastic!

    Doing my first pork spare ribs right now. Are they done basically like other racks of ribs or is there anything I need to know about them?

    You can just leave them on the pit till they are are done, or do the 3-2-1 method.

    Mine was my first jump into charcoal smoking and has made some really good food. It takes a little experimentation to learn what it does well and what it's not so great for. I typically only fire it up for cooking 8-10+ lbs of meat because it's a bit to get going for anything smaller.

    You also have to learn to just let it run because you will go mad trying to maintain temp. There is really no adjustment and through the cook the temps will climb and fall seemingly at random. Just start it up, throw in your meat and watch the meat temp until it's done.

    It has made some absolutely amazing ribs, pork belly burnt ends and al pastor pork among other stuff. I still haven't gotten brisket the way I would like on it but I have struggle with it on the Weber kettle too. I'm going to try my first turkey on it tomorrow so we will see how that goes.

    Awesome, thanks for the feedback. What you are using it for will be the same I do. Just taught for the price I might add it to the collection. That is the main complaint I have heard is keeping the temp regulated and it doesn’t really cook at a low temp.

    My phone will ask if I want to change the size of the photo when I add it into posts on this forum. If I don’t click “keep actual size,” it’ll rotate the photo for some reason. Might be your issue also?

    The forum software automatically resizes photos, so I just keep it full size each time. In case anybody else has or maybe doesn’t have this issue, my phone is an iPhone 11 Pro Max. Didn’t happen on my old iPhone 7 Plus, so not sure what changed besides (assumedly) the file size of the pics.

    I just noticed this issue last night. I had been resizing my photos before and hadn’t had that issue. I have an iPhone X but haven’t upgraded recently.
