    The thing I miss most while I’m on this diet is Sierra Nevada. It’s also probably 75% of the reason why I needed to lose weight in the first place. Good thing it’s been so effective...down 33 pounds since October.

    What kind of cheese?!?! I have family in Wisconsin. I bring home a ton of cheese from Gibbsville whenever we are up there. They have some good spreads, but I'm a sucker for the super sharp and special reserve bricks of cheddar. The special reserve is so aged that you can't really slice it. It just sort of crumbles off of the block. Yummmmm.

    Holy crap! That looks absolutely amazing!

    Back in the late 70's early 80's was in Bremerton and Seattle was always a bit "interesting". Portland wasn't too bad back then pulled in there on a tincan a couple of times for the Rose festival. Now I guess both are at a whole nuther layer. First elk was down in Timber, OR. where my girlfriend at the time was from and also hunted in the Bitterroot mountains with a friend from Coeur d'Alene. It has all changed a lot since then I've heard.

    I kind of like being isolated in flyover country anymore. When I travel to cities around the Country and sit in an airport feel like I am looking at a freak show more times than not :anonymous:

    Damn kids get the hell off my lawn!

    I used to do a bunch of work in Wisconsin, loved the nice fresh cheese curds. After the first time I had at lunch with a client I stopped at the same restaurant got another batch to go and took them back to the hotel for dinner. :)

    Wish I could find some good ones here.

    Yeah I like aged Cheddar but not too many crystals yet crumbles. 5-7 years aged is my favorite. Hook's cheese in Mineral Point, Wi. is my favorite our "neighbors" pheasant hunting in SD turned us on to it. We take turns each year doing a couple of meals for each others camp complete with appetizers, etc. This is one of the sons that now lives in Idaho smiling after he brought us over a prime rib he did on his Ronco Rotisserie LOL. It actually does a pretty decent job

    Doing a search for Hook's came across this article on aged cheddar crystals. And of course Hook's.

    I prefer a really sharp cheddar over everything else and swear extra sharp just isn't as sharp as it used to be. Then ran across this awhile back and feel it is pretty accurate. Now I know why it isn't as sharp as it used to be

    I need to be looking for some NY or Vt. white extra sharp.

    Yeah fresh makes all the difference in the world. I have gotten spoiled here and learned they should be fresh enough that they squeak against the teeth :thumbsup:

    Yes sir, explained the squeak to my daughter. The other night she wanted to go to Culvers for a Butter Burger and Cheese Curds. She kept trying to find the ones that would spueak and would tell me I found a fresher one daddy it squeaked. :)
