But I already got at least 3 or 4 briskets sitting in the freezer

We have visitors from Seattle coming this sunday, so I got the brisket thawing in the fridge.

Also bought some pork belly yesterday and pickled some daikon and carrots. Going to attempt the smoked pork belly steam bun this weekend. If it turns out bad, we got the brisket to fall back on.

No shit, we oughta figure out some dry ice transport system amongst ourselves. If shipping costs are low enough, this could seriously be worth it. Brisket up here is like 7 bucks a pound if I'm lucky.
