    Trimmed the brisket up this evening following Aaron Franklin’s video guidance. That guy made it look way easier than I did....

    Morning fellas. Smoke is rolling, first attempt at brisket is underway. It was a brisk 36F at 5:30 am.

    Phone keeps turning images sideways oh well.

    smoke one is underway. Smoke two begins now in about an hour or so. One rack will be smoked the whole time. Other rack is going to pull off and do in instant pot for about 30 minutes to push through the stall. New method haven’t tried it before. It’s for the contest.

    when the next rack goes on I’m also doing some snausages too.

    I’m doing mine now!

    the rack on the right is for the contest it went on a few hours later than the one on the left. Goal is to instant pot it through the stall ish timeframe with down East cider. Sausages are just for fun. Never done ribs this way but I’ve read about it a few times. The risky part is that I have to cut them up before they go into the instant pot.

    Dry rub sticky ribs with home made bourbon barbecue sauce.

    (Will finish ribs off by topping with a few coats of sauce)

    Cooking on a Pit Boss Pro 1100
    Starting off at 165 deg (P5)
    ***update***
    After 1st hour temperature stabilized at 135
    Set P setting to P4, temp seems to be holding at 140
    ************
    Nice day to top it off,

    I have cooked on all kinds of grills, smokers & barbecues.

    I was pretty reluctant to switch to a pellet cooker but so far it seems to be great & it is very predictable. (Very nice to have if I am juggling multiple things in the kitchen)
