    well.... that 6am plan got shit on by the bbq gods... my pellet pooper had a malfunction during start up and I’m trying to get back on track...

    Yea first one I have had on this thing... started It up like normal (or so I thought) brought it up to temp... went and put the meat on as as soon as I did that the temp just fell out.... so I quickly tried to do the shutdown process.... then unplugged and replugged in... started it up like normal (or so I thought) and once it hit 150 it just kept climbing... and climbing and climbing to over 400 in a very short time.... did shit down process again took everything out... yes it was hot... and cleaned as best I could quickly with it being so hot...

    Did my THIRD start up and seems to be working this time.

    What a stressful way of starting my first brisket.

    That would stress me out too. Typically, I’d do the same steps as you, but then I’d crack a couple cold ones and put my feet up.

    If you can keep your temps steady and in the ball park of the “experts” recommendations, you’ll do just fine. Whiskey wouldn’t hurt either.

    Idk if I’ve broken the curse or what, but I’ve not seen a stall and I’m at 190 on a brisket. Wrapping just to be safe.

    I’ve been at 225-240 all day, just moving along. Something feels off.
