    Lump hardwood charcoal started with some standard briquettes and a propane torch. That shit gets fucking hot once it's going.

    That's basically what I have for the blower. It's a pwm speed controller.

    Well I'm 9 hours in and my contraption is still going strong. The shoulders went on at 8am and the ribs went on at 12. I just uncovered both to finish them off.

    I put a brick in one end of the pan to take up space and block the unused air holes. Heat is just about right and the PID controller is doing its thing. This iteration does work, but I'm not in love with the perforated pan. The holes are too small in this one and they are starting to clog up with ash. I am finding I have to add more charcoal every 1.5 hrs or so.

    For next time, I am going to find a 1/3 size pan which will be about the right size. I am also going to rework the stock blower and heating element in the bottom of the cabinet for some aux heat. I have zero use for the stock temp control, so I think I will just use another controller to run it at an adjustable duty cycle. I'll also package everything up and put it in a nice enclosure.

    Overall I consider it a success.

    I think these are probably the best ribs I have ever done. It was getting late, so I am finishing off the shoulder in the oven.

    Next weekend will be my first chance this year for a smoke. :drool: I’m thinking sausages and a butt. I’ll probably get the coals going hot one night soon for dinner just regular grilling to make sure everything’s clean and good to go.
