    My Costco BB ribs smell a bit like sulfur after opening the cyrovac, but I *think* that's normal. Hopefully goes away after cook.

    Well, they're in the smoker, cuz Costco is 50 miles from me and fuck it, giving it a shot. I read quite a bit online where people say cyrovac pork can smell that way, carry on. So I don't know.

    it's not horrible, but I didnt smell anything at all with them before, but I've only bought them once before.

    This. Whenever I open cryovac ribs there's an unappetizing smell. I always rinse them very well with cold water and dry off and never had an issue.

    I wonder what others do: always rinse, sometimes or never?

    It's the "brine" they are packed in, mostly nitrates/nitrites. They'll be fine. Some studies show a link between nitrates/nitrites to Alzheimer's. Wait, what was I talking about.....

    Thanks for the info. Any idea why they don't always smell that way? These were definitely sealed tight, and today was the sell by day. They've been kept in cold fridge since I bought them a week ago.

    No insight on that. Maybe the age? But I've noticed it before, soon as you cut open the plastic, it's like WTF!!! I just rinse the crap out of them and proceed as usual. I try to avoid the "packer" stuff if at all possible.

    Dunno, might have been fine. Maybe I just thought it still tasted like sulphur. Everybody that I actually talked to was like "don't do it, you'll die". I got rattled. Reminds me of the first time I went tent camping all through Baja, everybody was saying I'd get robbed by the Frito Bandito. Truth is they had no idea, no facts. That time, I said fuck it. This time, I caved.
