    I have cooked multiple items on modified char grill from chicken, rib racks, brisket and turkey.


    I have cooked basically all slow cuts on a weber kettle with a SnS DIY style setup including pork butt, turkey, brisket, pork shoulder, whole chicken, Chuck Roast, and salmon.

    Cook something with a higher fat content to help season and seal up your WSM. A bunch of whole fryer chickens or a couple of pork buts. It's going to run hot for a few cooks.

    I seasoned my WSM with bacon for the first couple of cooks. Worked out pretty well.

    It's one of those things where it's good to have options. A horses for courses thing. If you have a 16# brisket, nothing beats smoking, if you have a heavy porterhouse or ribeye, oh man that grill would make it sing.

    Got my WSM assembled and ready to go.

    MY 2 weber kettles. One recent premium model. one early 00's weber kettle (maybe 1990s)

    The smokey joe is a 1977 that I bought in a sealed box. I felt that I should not have opened it, but it wasn't worth that much as a collectable.

    I've just realized that there's no actual Grilling Thread.. I might have to do something about that.. anyways.. working on my grilling marks with some Spicy Miso Chicken Breasts and some Char Siu Chicken Breasts.
