    I would do it hot and fast! Ripping hot grill and flip the meat every 30 seconds - do this until you hit your desired doneness. Let the hot heat cook it, but also get some char on the outside. At least this is how I do my carne asada.

    What cut of beef is it? Skirt? Flank? Flat iron? I’ve seen various cuts as a pre marinated cook.

    A few cooks from the last two days. First - an amazing tri tip from a local ranch here in New Mexico. Dang if this wasn’t the best beef I’ve had. Marbling was wagyu like - this place says all beef from the ranch is prime - and everything I have got from them has been close to this. But this was excellent! Rubbed with SPOGOS and on to the kettle for some charcoal flavoring and seared to finish. Then after dinner Sunday - on went the two pork butts for our after graduation lunch for my son today. Meat Church The Gospel, 250* cook to get to 198* internal and pulled - then double wrap in foil and held in my cooker at 140 until lunch - (long hold at 9 hours with the earlier than expected finish, but the cooker was perfect for this).

    Now…i sit and relax after a whirlwind of a weekend!

    Alot more moisture than a gas grill. Meat was nice and tender, nearly fell apart in our mouths. The fat, instead of burning, turned mostly into sweet butter. Overall, *click* noicccce.

    My recommendation is don't order online. Buy from a butcher shop, Costco, or your local grocery store where you can see what you are getting before you spend your money.

    One of the BBQ/food boards I’m on, a number of people go through Porter Road. I’ve ordered from them a number of times in the past and liked what I got from them. But I’ve since found a local ranch that has a store here in town that I purchase from now. That tri tip above that I cooked Sunday is from them - No Bull Prime Meats.

    And, Costco does have some great stuff as well - brisket, tri tip, sub primals that you can steak out on your own and vac seal/freeze for much cheaper than buying individual steaks.

    But, I can say the people at Porter Road do a good job with their service, and recommend them if you aren’t able to find something local.

    Our Costco supplies excellent cuts of meat. For briskets I really like certified angus beef but it's not a must have. If I really want to impress myself it's what I buy, though an $80-$90 brisket makes my ass draw up when they hand me the bill I think they are worth it for a splurge.

    Having typed the above, our local Kroger has briskets on sale so my wife is picking one up this morning. Probably be 15 pounds, after 15 hours in the smoker it will be 7 or 8 pounds but if it's cheap enough it will do.

    Costco has good meat at fair pricing. Funny story from when I was in the business. Our chef got a call from his wife one Friday night just service was beginning. As returned to his station he had us in the kitchen all laughing as he told us his wife was at Costco with their kids doing a shopping run for their hame and ran into Vancouver's big name celebrity chef of the time as he was buying meat for his restaurant.

    Our chef's comment, "On a Friday night, during service, doesn't he have a better place to be? Like manning the fucking stove is is fucking kitchen!"

    I found a local butcher near me. Picking up 8lbs of bone in pork shoulder tomorrow to start smoking Saturday morning. Will post up progress. Wish me luck!
