    That stuff will keep for ever. With all the salt and lack of oxygen, you'll be fine. However, on long term orders in advance, I do seal and freeze. Got almost eight pounds going on tomorrow.

    Thick cut bacon
    Stove top stuffing
    Tooth picks
    Cut bacon in half
    Mix stuffing with water
    Ball up stuffing the size of a Swedish meatball
    Wrap with bacon
    Secure with tooth pick
    Bake at 350 for 45 minutes to hr
    Enjoy
    Wife likes to do it on a broiling tray with the slots in it so the grease falls away
    Been doing it for very T day for decades.

    Pro tip- make a double batch cuz you’ll be gobbling them as soon as they come out and won’t want to share lol

    Today will be a 14lb turkey on the offset. 48hr dry brine. Spatchcocked.
    And a tiny one bone (3lb) prime roast.
    Red oak for coals then cherry for the smoke. It's about 45F here today with a good breeze.

    The roast is plan B in case I punt the turkey. Having never done one before. It's just my wife and I chowing down.
