    That's freakin awesome. I have wanted to try to brew for many years but have never been able to convince myself to spend the needed money to do it right (ya I'm one of those if I'm going to do it I'm doing it right people - which my wife says means I am going to spend a lot lol).

    Down if you have a hard time controlling temps. Adds a layer of protection from the heat source becomes to high.

    Up if you have a pellet pooper like me or another way to control temps. Lets all that good fat (very little in the cap) render.

    I was looking forward to some beers after work, but now I get to sit at Sam's Club while they put new tires on my wife's car. Hopefully I can wander around and find some stuff to waste money on. :)

    Pretty sure I posted this, not sure I posted a pic though. I cross cut at least an inch into my butts. Creates lots more surface area, equals more rub, equals more bark. And it seems to reach temp a bit quicker. YMMV. IMG_1319.jpg

    Then, I kinda bunch it back up some when placed on the grate.

    if you do fat cap up, you have to realize that the fat molecules are too big to penetrate into the meat... they just wash the rub off. fat cap down for me every time, without question.
