    Made some loin chops. Butterflied, brined, smoked. Tasty….still dry-ish. I think I just prefer some skillet fried chops! :ballchain:

    I have plans to smoke ribs next Friday using it, however it might not be installed by then. There are 3 special clips needed to install it on a 26" kettle, but Amazon doesn't sell those, so I ordered them directly from the manufacturer. It's been a few days and they still haven't shipped. Their shipper is the USPS and it's coming from Georgia. I imagine when it finally does ship, it will take a grand tour around the country a few times before I get it, as the US postal service does it.

    I just ordered a roasting rack like this below. So next time the meat won't be sitting in it's own juices.

    I will definitely be trying that as well. With a pan underneath.

    The main reason I like them in a pan is easy to move out for wrapping, etc. Doesn't stick to the rack. I've had the meats stick to the rack .and they tear apart as I'm trying to remove them.

    I have one like that. For all that is good and holy, line it with foil when you use it. If everything in the universe has a complete opposite, a non-stick pan is the opposite of that one.

    Yea, I have the same combo grill. It's my second one and I can say the first one held up better. Although that one didn't take two trips off the back patio by the wind :laugh:

    It sits kind of crooked and I really need to weld it back solid. However the gas side is kinda getting crusty so not sure if I want to spend the time on it.
