    My favorite part of a cook - the sides are prepped and I get a cigar by the fire. All night can be rough, but these moments of pure calm in the earliest of mornings make it worthwhile.

    I overload the top(not that that's a bad thing) because there is none on the bottom. By the time they're at this point they are so hard to turn over without falling apart. I like to keep them whole for serving.

    I smoke every weekend. Today is baby back ribs with 2 different seasonings. Also smoking mac n cheese. I smoked the cream cheese for 1 hour before throwing it into the mac mix.
