    I did the pork burnt ends last Saturday. They were good, but needed to cut times down to 3 1/2 hours on grill, and 30 minutes after saucing in a pan. A bit "dry" at 4 hours/1 hour. This was done at 250 degrees. I will definitely try it again! They had the taste of rib meat, and I love some ribs! I used Franklin BBQ Texas style sauce.

    I've seen these before. It's funny to watch chefs on the food network tent some meat in a pan with plastic wrap then run one into the pan for 5 minutes and call it smoked.

    I do think they have one interesting use though - could you theoretically run the tube into a bottle of tequila or bourbon and add some smokiness to it? Maybe a cool way to class up a cheap bottle.

    Agreed about the temp /time. I treated them more like brisket burnt ends, way too much time and way too much rub. They're a different beast (literally :)). Having said that, even though I fcked them up, they were damn good still.

    Little story about my "fckd up" pork burnt ends... The heat was too high too long, and the rub was too much salt. So, I got a large container of cooked white rice from Safeway Chinese Express (was in hurry, didn't want to cook rice), put that in large skillet with the pork chunks on med-low and stirred once in awhile for total half hour. Then pulled out the pork chunks. The rice soaked up a lot of the salt. Threw away the rice. Problem one almost solved. Then I reduced some OJ with some white sugar over medium until it was fairly thick, then tossed the chunks in it. The acidity of orange and sweetness of sugar evened out the rest of the salt nicely, no longer too salty. Next, I further cut up the chunks and tossed them in a large skillet with some Mexican sour cream (not Crema) like a Stroganoff, medium for 10 minutes. Put that mixture on hot dog buns with diced onions and Cotija cheese. Muy bueno!

    Cheapest I have found here is $1.49 a lb so far. I keep looking for cheaper but I have to get it bought today or tomorrow to prepare for the weekend.
