Lots of sage and onions and good ole earthy flavors.

Speaking of which, I've been trying to decide what to do with some venison sausage I have sitting around. Thanks for making me think of that :D

is it a kit sausage or something you had done at the butchers?

This wasn't from my deer. I do all my own butchering and sausage making.

This was from a friend who I bumped into while glassing last year. His family had just harvested four elk and there was no way they were going to use it all so he asked if I wanted some. Of course I said yes and when he dropped it off he had thrown in five one-pound tubes of venison jalapeno sausage and five chorizo. Needless to say I was thankful.

    Thats awesome!
the chorizo would be good with scrambled eggs and rolled in a tortilla. The jalapeno sausage would be good with some cheese and ritz crackers..

well, went out to the garage last night to find out my meat freezer had tripped its breaker and was nice and thawed... it had a wireless alarm on it, buuuut lazy me hasn't changed the batteries since they died a week or so ago. :annoyed: I guess its time to start looking for meat deals again.

That sucks man. We had that happen with our Fridge/Freezer we keep in the garage. Guess it got TOO cold outside for it and it decided ya I'm not going to work anymore. Ended up losing everything inside of both parts of it.

When we got the new chest freezer it went in our laundry room so we didn't have this issue again. Luckily we haven't had it, not fun replacing a big bunch of meat.

yea I just happened to walk by it and see the little orange light on the GFCI outlet and thought oh fuck. hoping that it held its cool, I opened it only to see that a bunch of sheepshead that I had saved was all mushy and the chicken had a weird color to it. just closed it back up and turned it back on to wait for trash day...
