    I got the imusa pot at Walmart for $22. The lid is a little tight. The bottom fits pretty good.

    When I'm at home, I'll prime some extra briquettes in the chimney starter so that when it is time to sear, I have a roaring fire. I was using my dad's stuff and didn't have that luxury, nor did I have enough coals to pull the steak, build a fire in the pit, then put back on. No big deal. It did turn out good.

    I'm on my home turf today, though, so I expect it to go a little easier ;).

    The thicker the cut, the more likely I am to reverse sear. I'm not as good at avoiding the grey band below the surface when I sear and slide. Some do that much better than I, so I stick to the reverse sear.

    Smoking beef ribs for the first time - things things are HUGE, about 1lb per rib. Plenty to go around if any of y'all want to join the family dinner today.

    I found a recipe somewhere that said to smoke it to 110 IT, then sear. Gave it a bit more time for that nice sear.

    I've only done it once for Mother's Day, and let's just say I was rewarded for the effort. It was the best steak I've ever made.

    Definitely true. I overshot it by a tad, so I didn't get to sear it as long, less I risk it shooting past medium-rare with the carryover. I have another big hunk on now. We'll see how it goes!

    I'm having to treat this more like a prime rib than your typical ribeye. Bastard is huge!

    Spent my first 52 years doing it the "normal" way, only in the last year have I been doing it this way. Old dogs can learn new tricks :)
