Food Smokers and Smoking Tips/Tricks/Techniques

I can see already that the reverse flow is going to be in my future. Two racks filled this one up. I'd like to be able to make enough for us for dinner and then have something to take to work the next day.

 

I changed up a little today and used one of the circle pans you put the charcoal in and topped it with apple chips. Having an issue getting the temp up today. Thinking I may need to change it up in a bit to just the coals on the grate in the bottom like last night. Still climbing but not getting up to 225.

 

does the pan have holes so the charcoal can breathe?

 

It's not going to work running low like this.

 

What temp are you at and what level inside are you measuring temp?

 

No. it's this one.

I just looked it up and it says it's for their Komodo grill.

 

138 at the cooking level.

Showing about 130 at the gauge on top of the smoker.

 

Stack is wide open and intake is 3/4.

 

You should have got a pellet pooper.

I like doing it the hard way and actually being out there.

I hear you can grill and smoke from the couch with those and your phone though.

drill some 1/2" to 3/4" holes in the bottom of that holder, its not getting enough air to get the coals burning hotter.

 

Ya I was going to say you aren't getting enough air in to heat the coals up. MODIFICATION time.

 

I dumped the tray out onto the grate and added some charcoal to it. It's coming up some now.

 

Up to 200 now. Damn gimmick trays.

Take the charcoal rack out of the charcoal grill, take the supplied grates for the offset box, and put them under the normal grates in the grill section where your meat is. Almost doubles your cooking area.

Edit, you might be able to just put the offset grates under the regular grates with the other thing in there.
