    It also helps if you put a pan full of salt under the but not touching the meat. A small RV battery operated refrigerator fan keeps air movement within the fridge helping to wick away moisture.

    So without giving away trade secrets what is your general technique here?
    I'm about to thaw the side meat from our last butchering and I'm gonna make some spicy rub bacon with the center cuts. The end pieces are gonna get turned into burnt ends for my little girl's 3rd birthday party next weekend and I don't wanna screw it up lol

    I probably have enough momentum on this guy to finish it naked, but I'm still working on butcher paper wrapping, so in it goes.

    I've been cooking at just 250*, but this thing has gone mighty fast.
