    Yeah, a electric is almost too easy. They don't allow them in competitions for some reason. Use with a AMAZN smoke generator and it is "set and forget" I put on a butt and go to bed, knowing I have about eight hours of perfect smoke and temp that I desire. Just right for college football Saturday's.

    Electric smokers don't produce the much heralded smoke ring that PitMaster judges look for...the meat actually taste no diff....:D

    Yeah you'll will have very little if any smoke ring on electrics. But I could care less about "looks".

    My dad used to smoke fresh caught fish all the time. He did a few other things in it too. Was always great!

    Do you have the Bitman How to Cook Everything book? It has a handy chart that has good temps for keeping meat tasty, not FDA nuclear standards. Plus it is a damn good book.

    Most any digital probe will have standard temps listed on them or programmed in them. The Maverick linked at the bottom of this page seems to be a popular one. Can't recall which one I'm using, it was around $20.00 at Wallyworld.
