    maybe something to this...the kingsford link I posted says it can go up another 10 degrees after being taken off so in essence it coasted in to the 195 degree range;) be my best guess;)

    Did you let it warm to room temp, or put it on cold?

    I find I get a bigger ring the cooler the meat is when it goes on.

    Ya cold meat supposedly takes the smoke better. Sticks to it better according to what I've read.

    Here's the bird right after coming off the smoker, just before it got tented up. I didn't have any (not a huge turkey fan and we had ham which I am a big fan of). I was told by everyone this was the best yet. So either the skills are increasing or they all just drank too much. Either way my ego appreciated it. :rofl:

    Went out to eat for Thanksgiving. It sucked, pretty bad food.

    Can't really do Thanksgiving after the fact but did a turkey and sides today. 13.5 lb. young hen 4 hours at 300*

    With orange juice or any citrus because it is acidic I wait until an hour before smoking\cooking before injection. Otherwise it can turn the meat to mush.

    4 hours at 300* and no wood smoke. Didn't need it with the butter and fat hitting the coals and the flavor is outstanding.

    Directly over coals, no diffuser.

    Rested for 15 minutes. Then went for the dark meat. The skin was pretty damn good too. Very tender and juicy white and dark meat.

    I have been using a "dust maze" from Todd for about ten years, way before he offered the pellet tubes. Can't speak to the tubes, but I think the mazes are underpriced.
