    For those of you that smoke cheese. Do you have a particular wood that works better for you or just a preference? From what I’ve seen thus far, hard to medium cheeses work better and the heat needs to be kept at or below 100. Was out with the missus last night and had some nice smoked Gouda. Thinking now that it’s cooler out that I could give it a shot.

    Any wood should work. Start light. Try 30 mins of smoke and see what you think. Also, the longer it sits the better. I vac-pac mine after it’s smoked and keep it in the fridge for at least 6 weeks before I touch it.. Found a pound of Swiss this week that I smoked in March. Should be awesome.

    Amazn Smoker tubes work great for this because they add very little heat. Any BBQ grill would work great for smoking like this - put the smoker tube on one side and cheese on the other and open the vents.

    I’m prepping to smoke cheese for the first time on Tuesday. I don’t have a vacuum sealer yet so I was going to wax them. Suggestions on what wax to use?

    Again, it's all preference. I do hickory for four hours. That may be too much for some, however I've never had anything that was too smokey. Let it rest for as long as you can. The only exception is mozzarella, it doesn't seem to get better with age? I recently ate the last of some I did almost two yeas ago (vacuumed sealed) that was spectacular!!!!

    Stumbled across a 20# bag of hickory pellets at my local Wal-Mart for $11.87. Didn't grab it as I'm still deciding whether to switch to pellets, but FYI in case you've already made the leap (or own a Traeger)

    I'd think any fruit wood wood work well there too; apple, cheery, or peach possibly.

    I use LumberJack pellets. What brand are the ones you found? I am not a fan of the Traeger pellets, good heat really lacking on flavor. I've heard the newer version is supposedly better but I will now stick to what I know is good.
